Steps to a freezer filled with Premium Beef
1. Select Your Share: Choose the bulk share that best suits your needs: quarter, half, or whole.
2. Place Your Order: Submit your order form to Seven Springs Cattle Company, along with your deposit, to reserve your share of beef when it becomes available.
3. Custom Cut Selection: Our USDA-inspected processor will provide you with a customizable cut sheet. They will contact you before processing to discuss your preferred cuts, package sizes, and any specialty options.
4. Packaging Preferences: Choose your preferred packaging: vacuum-sealed or double-wrapped (poly & white paper). Our beef is typically dry-aged for 14-21 days to enhance tenderness and flavor.
5. Final Invoicing: We will invoice you for the final cost of your beef, based on the hanging weight minus your deposit. A separate invoice for processing fees will be provided by the processor.
6. Pickup Notification: We will notify you of the designated pickup date.
7. Pickup: Customers are responsible for picking up their boxed, individually packaged, vacuum-sealed, and frozen beef from the processor on the scheduled date, unless alternative arrangements have been made.
How much Space is Required?
When planning to purchase beef in bulk, freezer space is a key consideration. Here’s a quick guide to help you determine how much room you’ll need:
A helpful rule of thumb is to plan for 1 cubic foot per 25 pounds of beef. For reference, a standard milk crate is roughly 1 cubic foot.
- Whole Beef: Requires approximately 14-17 cubic feet of freezer space.
- Half Beef: Will take up about 7-10 cubic feet of freezer space.
- Quarter Beef: Needs approximately 3.5-5 cubic feet of freezer space.
Before Placing Your Order
- Decide between a ½ and whole Beef.
- Customizable cut sheet through the processor. They will take your order before processing to determine your selected cuts and package size (roasts, steaks, bone-in, tenderized, stew meat, etc.)
- Packaging – you will choose double wrapped and quick frozen (poly & white paper) at $.70 per pound or Vacuum packaged and quick frozen at $.80 per pound.
- Additional minimal costs for tenderizing, hamburger patties, specialized trimming, boxes, added dry aging.
- Take Home is Approximately 67% of your hanging weight.
- All Beef comes frozen, Vacuum-Sealed or double wrapped, and Boxed
- All Cattle are traditionally raised on grass pastures and custom feed. No feedlots, additives, food coloring, antibiotics, or added hormones.
What is Hanging Weight?
Hanging weight refers to the weight of the beef carcass after slaughter, following the removal of the head, internal organs, hooves, and hide. Your take-home weight, which is the packaged meat you receive, will typically be around 60% of the hanging weight, though this can vary depending on your chosen cuts.
How Much Meat Will I Take Home?
· Whole Beef: Approximately 390-490 lbs. (60% of HW)
· Half Beef: Approximately 195-245 lbs. (60% of HW)
Please note that these are estimates, and the final weights will vary depending on the animal and your cut selections. We will provide you with the most accurate estimate possible once the butcher has processed your order.
What is My Cost Compared to Retail?
On average, your cost per pound of take-home beef will range from $5.50 to $8, depending on the volume you purchase, finishing, and the cuts selected. This includes everything from ground beef to premium steaks. Compare this to average retail prices for grass-fed beef, which typically range from $10 to $15 per pound.
Helpful Cut Information:
Steaks:
- The T-bone steak consists of a New York strip and a filet. You can choose between bone-in (T-bone) or boneless (New York strip and filet) options.
- We recommend a 1.25-inch thickness for all steaks, except for filets, which we recommend at 1.5 inches.
Roasts:
- We recommend a 2-3 lb. cut size, ideal for crockpot cooking.
Ground Beef:
- If you prefer more ground beef and less cubed steak or stew/kabob meat, you can specify a limit for these cuts, and the remaining meat will be processed into ground beef.
